It’s finally fall, ya’ll. Sure, the calendar declared it months ago, but this year it took the world a little bit of time to catch up. We’ve had a lot of warm days lately, but today, I opened my window and I could smell it, feel it, breathe it in with a big, lovely sigh. It’s here. Fall.

I just adore this time of the year. The colors, the crispness, the shift we all make when summer fades out and the cool season fades in. I don’t know if it’s my Nordic heritage or just years of conditioning in upstate New York and New England, but I’ll take cold over heat any day of the week. Somehow summer heat just seems too stifling, but a deep gulp of brisk, cool air opens me right up – it feels life-affirming. The time of the year is always a reminder that world keeps turning, and to make the most of each and every season. And with fall, that means long hikes, family get-togethers, cool nights, and some really amazing season food that taste just like Fall feels – utterly wonderful.

Ah, the humble meatloaf. It’s hearty, it’s a classic, and it’s a go-to comfort food this time of the year. But despite its unassuming intentions, we can all agree that your average meatloaf can be a fickle, tricky old lady — out of nowhere, she can turn on you, ending up dry, and a little bland, and just plain… blah. Ho-hum. And a little ugly to boot. But then, what do you expect with a name like meatloaf? It’s a loaf of meat. Doesn’t exactly sound like a lively dish, does it? The poor thing hardly stands a chance.

Luckily, this is by no means your average meatloaf, because this isn’t just any loaf of meat. Studded with gorgeous, rich, classic French flavors — mushrooms, lentils, mustard, a hint of thyme, and the the pièce de résistance, a red wine glaze — its name should appropriately be French as well, c’est non?

My grandmother’s homeland, I was brought up with its customs and traditions and as a child, I remember thinking that it must be some kind of magical Neverland. So much of Norway is about what’s just below the surface. Deep glacial inlets filled with blue waters, lush green forests teeming with northern wildlife, and quaint homes with sod roofs placed within the country’s many hillsides. Its people are kind, genuine, and rooted to the land, the water, and their history. We visited family who greeted us with open arms and a celebratory feast, and I like to think I got a glimpse of the country through my grandmother’s eyes when I visited her home in Bergen. Everything there just seemed richer — the colors, the culture, and definitely the flavors.
